Punjab
is a land of abundance filled with good things to eat. The world famous
tandoori chicken, chola batura, dahi wada, paneer mutter and gajjar halwa
were all born here. Punjabi’s are acclaimed gourmets the world over
they believe that good food not only strengthens the physique but also
enriches the mind. Their fondness for rich food has led to an abundant
variety of spicy and colourful curries, wholesome halwas and delicious
and nourishing parathas and excellent chicken and mutton recipes which
very few people can resist. Punjabi’s prefer wheat to rice and they
are the only community in India who excel in preparing parathas and roties,
and it is unlikely that any other community can boast of a greater variety
of recipes of parathas. Vegetables are also of great importance and many
of vegetarian recipes, there are also many interesting nonvegetarian recipes
in the book. No matter how poor a Punjabi family, their food is usually
well-prepared and is pleasing both to the eye as well as to the palate.
This book will not teach the reader how to cook. It has been assumed that
such fundamentals of food preparation like the cleaning of mutton, poultry
and fish, boiling of eggs, washing and soaking of rice and dals are known.
In this vein the simple every day steps are omitted by me because I am
sure any person who reads the instructions carefully will be able to prepare
any of the recipes given in the book without any trouble. I have made
use of ghee in all the recipes because Punjabi’s very rarely make
use of any other medium of cooking, and if you like you can substitute
any oil you like for ghee and the results will be equally good. I am grateful
to Mrs. Govind chadha, Mrs. Shail Malik, and Mrs. Yogdhyan Ahuja for lending
me some of their recipes to include in this book. All the recipes in this
book are tried and tested, authentic and original and exclusively from
the land of Punjab. I hope you will enjoy preparing these recipes as much
as I have enjoyed writing them down for you.
