How to Prepare / Make / Cook - Khamiri puri ?


Khamiri puri

125 grams flour. 2 cups flour. 1 tblsp. Curds. 1 tsp. Sugar. 6 to 8 coarsely pounded peppercorns. 25 grams raisins. 50 grams coarsely chopped cashewnuts. Salt to taste.

Mix together 125 grams flour, curds, peppercorns and sugar. Add enough water to form a dough. Cover and set aside overnight. Next morning, mix in the remaining flour, salt, nuts, raisins along with enough water to form a dough of medium consistency. Apply ghee nicely to the dough and set aside for 4 hours. Knead once again until smooth. Then using a little flour, shape the puris on your hands keeping them as round as possible. Deep fry to golden colour. Drain thoroughly and serve piping hot.
