How to Prepare / Make / Cook - Satpura paratha ?


Satpura paratha

3 cups flour. 3 tblsps. Ghee. 1 tsp ajwain. Salt and chilli powder to taste.

Blend together flour and seasonings. Rub in ghee. Then add enough water to form a stiff dough. Divide dough into lemon-sized balls. Take a ball of dough and roll it into a long strip. Apply melted ghee liberally on the uppermost side of the strip and fold over. Once again apply ghee liberally on both the folded sides of the strip. Then place one edge of the folded strip on the palm of your left hand and with the right hand coil the strip round and round till the whole strip has been coiled, then press flat and apply dry flour on both the sides of the flattened strip of dough. Then roll into a round disc or paratha of one-eighth inch thickness. Place this paratha on a well-greased smoking girdle and keep on turning its sides and applying ghee till the paratha turns golden brown coloured. Remove, apply ghee liberally, then press paratha sideways with your hands to separate layers and serve immediately. This is a very famous and one of the most delicious parathas of Punjab.
