How to Prepare / Make / Cook - Rajmah ?Rajmah 225 grams each of rajmah and potatoes. 100 grams tomatoes, diced. 3 green chillies, minced. 6 flakes garlic. 1-inch piece ginger. 4 tblsps. Beaten curds. 2 big onions. ¼ -tsp. Grated nutmeg. 1 small piece rattanjog. 1 tblsp. Roasted and ground cumin seeds. ½ tsp. Garam masala. Handful of sliced coriander leaves. Salt and chilli powder to taste. Boil beans as shown in the above recipe. Peel and dice the potatoes.
Grind ginger. garlic and onions to a paste. Heat 3 tblsps. Ghee and fry
the ground paste to a golden colour. Put in half cup water and cook till
the mixture turns dry. Mash to a paste with a wooden spoon and put in
tomatoes and curds and all the spices. Cook till the ghee floats to the
top. Put in potatoes and fry for 5 minutes. pour in 2 cups water and cook
till the potatoes are almost done. Stir in rajmah and chillies and continue
cooking until the potatoes are tender. Serve hot, sprinkle with coriander
leaves. |
