How to Prepare / Make / Cook - Vadia chhole ?Vadia chhole 3 to 4 green channa vadias. See helpful hints. 2 cups boiled channa. See above recipe. 1 big onion. 1-inch piece ginger. 5 flakes garlic. 2 big tomatoes, diced. 3 to 4 cloves. ½ -inch piece cinnamon stick, broken into bits. 2 tblsps. Nicely beaten curds. 1 bay leaf, crumpled. ½ tsp. Cardamom seeds. 3 green chillies, minced. Handful of sliced coriander leaves. Salt and chilli powder to taste. ½ tsp. Turmeric powder. Grind together onion, ginger, garlic. Heat 3 tblsps. Ghee and fry the
ground paste to a golden colour. Put in ½ cup water, bring to a
rolling boil, reduce heat and cook till the mixture turns dry. Put in
whole spices, curds and tomatoes and cook till the ghee separates. Put
in turmeric. Salt and chilli powder. Mix nicely, then put in the vadies
and fry for five minutes. put in 2 cups water and cook over a medium fire,
stirring occasionally until the vadies are almost done. Put in chholas
and chillies and continue cooking until the vadies are tender. Serve hot,
garnished with chopped coriander leaves.
