How to Prepare / Make / Cook - Beadam ghosht ?


Beadam ghosht

500 grams mutton, preferably of leg. 2 cups sour curds. 4 ozs. Blanched and ground almonds. 4 ozs. Blanched and halfved almonds. 2 big onions. 2 inch piece ginger. 6 flakes garlic. 1 tsp. Turmeric powder. 1 tblsp. Each of garam masala and roasted and ground cumin seeds. 1 tblsp. Coriander powder. Salt and chilli powder to taste

grind onion to a paste. Grind ginger and garlic separately and apply on mutton and set aside for 1 hour. heat 6 tblsps. Ghee and fry the onion to a golden colour. Add mutton and fry it to a golden colour on all sides. Put in the ground almonds, curds and all the spices. Cover and cook over a low fire till the mixture turns dry. Put in 1 cup milk blended with 1 cup water. Continue cooking till the mutton is tender and completely dry. Put the mutton in a serving dish. Cover the remaining halved almonds with foil and sprinkle over the mutton before serving.
