How to Prepare / Make / Cook - Boti kabab ?


Boti kabab

½ kilo mutton, preferably of leg. ½ cup sour curds. 1 tsp. Chilli powder. 4 green chillies. 1 onion. 4 flakes garlic. 2 inch piece ginger. a few mint leaves. Handful of coriander leaves. 1 small tomato, blanched and pureed. 1 tblsp. Garam masala . salt to taste.

Cut the mutton into cubes. Grind onion, ginger, garlic chillies, coriander and mint to a paste. Mix with curds along with the rest of the above ingredients. Set the mixture aside for 4 hours, turning the mutton pieces occasionally. Thread the pieces of mutton on a skewer and grill over an open fire, basting with the marinade from time to time until tender and nicely browned. Serve immediately with rings of raw onions, wedges of limes and green chutney and decorated with coriander leaves and minced green chillies.
