How to Prepare / Make / Cook - Mutton Dopiazza ?


Mutton Dopiazza
500 grams mutton. 500 grmas onions. 350 grams beaten curds. 6 cloves. 4 large cardamoms. 6 flakes garlic. 1 inch piece cinnamon stick, broken into bits. 1 tsp. Garam masala. 1 tsp. Each of chilli powder and ground cumin seeds. 1 tblsp. Coriander powder. Handful of finely sliced coriander leaves.

Grind to a paste ginger, garlic and onions. Heat 4 tblsps. Ghee and fry the ground paste to a golden brown colour. Add the mutton and the whole spices and fry it till it is well-browned on all sides. Put in curds, coriander powder, ground cumin seeds, salt and chilli powder. Cover tightly and cook over a low fire till the mutton is tender and completely dry. Then fry for a while till the ghee separates from the masala. Serve immediately sprinkled with coriander leaves and garam masala on top.
