How to Prepare / Make / Cook -Mutton rolls ?


Mutton rolls

½ kilo minced meat. ¼ kilo channa dal. 1 tblsp. Garam masala. 1 big onion. 1 inch piece ginger. 4 flakes garlic. A couple of mint leaves. Handful of coriander leaves. 4 green chillies, minced. 3 well-beaten eggs. 2 cups fine bread-crumbs. Salt and chilli powder to taste. For filling; 2 brains, boiled. 1 medium tomato, diced. 1 small onion, minced. Handful of coriander leaves. A few sliced mint leaves. 3 green chillies, minced. 1 tsp. Garam masala.

Boil meat and dal together until tender and dry. Then grind to a paste with onion, ginger, garlic, coriander mint and chillies. Knead to a smooth mixture, then mix in garam masala. Salt and chilli powder. Heat 1 tblsp. Ghee and put in onion and fry till soft. Put in tomato ghee and put in onion and fry till soft. Put in tomato and cook till ghee separates. Chop brains finely and mix in along with the rest of the filling ingredients. Remove from fire and divide the meat and filling ingredients into equal portions. Form the meat mixture into cups, fill with the filling, bind the edges together and shape into smooth rolls. Dip in crumbs and then in eggs and once again in crumbs. Deep fry to a golden brown colour. Drain thoroughly and serve hot with onion chutney.
