How to Prepare / Make / Cook -Kanji ?Kanji 1 kilo carrots, preferably black variety. 90 grams ground mustard seeds. 30 grams chilli powder. 115 grams beetroots. 2 ½ litres water. Salt to taste. Scrape, wash and cut the vegetables into two-inch long pieces. Boil water
and cool. Mix all the spices together with the vegetables and put in a
clean, sterilized glass bottle. Pour in the water and shake well. Cover
tightly and place in the sun for 5 to 6 days. The pickle should be of
a deep pink colour when it is ready. The juice of this pickle is very
delicious. Chill and drink it as an appetizer before every meal.
