How to Prepare / Make / Cook - Pickeld gooseberrys ?Pickeld gooseberrys 1 kilo gooseberrys. 500 grams sugar. 2 inch piece ginger. 1 tblsp. Each of garam masala and chilli powder. 1 tsp. Ground mustard seeds. ¼ tsp. Pan-ka-chuna. ¼ tsp. Alum 6 flakes garlic. 10 ounces white vinegar. Poke each amla all over with a sharp needle. Dissolve alum and chuna
in a dekchi of water and toss in the amlas. Let them remain in the solution
for 40 minutes. Drain out the water and then wash the amlas several times
in clear water. Now boil the amlas until they turn tender. Drain and put
in a pan along with sugar and sliced ginger and garlic and spices. Mix
until the sugar dissolves and then put in vinegar. Keep on cooking, stirring
frequently until the syrup turns thick. But do not allow the syrup to
get too thick. As it will thicken even more when cool. Remove from fire
and bottle when cold.
