How to Prepare / Make / Cook -Pickled mangoes ?Pickled mangoes 1 kilo mangoes. 125 grams salt. 50 grams each of chilli and turmeric powder. 4 tblsps. Each of anise and fenugreek seeds. 2 tblsps. Onion seeds. Mustard oil. Dice the mangoes into small pieces. Mix them together with salt and turmeric powder and place in the sun for 1 day. Drain out all the water and mix in the spices. Put in a clean, sterilized jar or a bottle and pour in enough oil to stand 2 inches above the level of the mangoes. Cover tightly. Tie the mouth of the jar with a muslin and place in the hot sun for about 10 days. After the mangoes are over, do not throw away its masala. Put in either
sliced carrots, turnips, cauliflower, pumpkin, radish, bittergourds, lotus
stems or kabuli or black channas. Cover tightly and set aside for 3 days
at the end of which it will be ready for use
