How to Prepare / Make / Cook - Pickled turnips ?


Pickled turnips

½ kilo turnips. 60 grams mustard oil. 20 grams garlic. 25 grams dry dates. 60 grams seedless golden raisins 25 grams white vinegar. 25 grams each of chilli powder. Ground peppercorns, cumin seeds and ground shajeera. 125 grams sugar.

Grind all the spices and sugar to a fine paste. Grind dates and raisins separately in vinegar. Peel and cut turnips into thick slices and place in the sun for a few hours. Heat oil and put in ground garlic and turnips and fry over a low fire until the mixture turns brown colour. Remove and mix in vinegar paste. Put in a clean, sterilized bottle and sprinkle ground sugar mixture on top. Cover tightly and place in the sun for 1 whole week.
