How to Prepare / Make / Cook - Sweet and sour vegetables ?Sweet and sour vegetables 1 kilo each of turnips and cauliflower. ½ kilo carrots. 125 grams each of ginger, garlic and mustard. 125 grams salt. 50 grams each of chilli, powder and garam masala which should be coarsely pounded, 300 grams finely grated jaggery. 8 ounces each of vinegar and mustard oil. Peel and cut carrots and turnips into thick pieces. Break cauliflower
into flowerets. Put the vegetables in boiling water and boil for a minute.
Drain thoroughly and scatter on a cloth and let them dry throughout the
night. Grind garlic and ginger to a paste. Heat oil and fry the ground
paste to a brown colour. Remove from fire and set aside. Dissolve jaggery
in vinegar and strain. Then place the mixture n fire and cook on a slow
fire till the mixture strings a thread. Mix rthe syrup into the mustard
oil and set aside. Blend together spices, salt and vegetables and put
in a clean and sterilized bottle. Pour the syrup over top. Mix nicely
and place in the sun for 8 days after covering the bottle tightly. This
pickle lasts for a year.
