How to Prepare / Make / Cook - Brinjal raita ?Brinjal raita 2 cups curds. 1 medium black brinjal. 1 tsp. Mustard seeds. 2 green chillies. Minced. 1 small onion, minced. 1 flake garlic, minced. 1 tsp. Roasted and ground cumin seeds. Salt and chilli powder to taste. Place whole brinjal over spit or hold with tongs over gas flame until
the skin blackens and wrinkles and it turns soft. Skin brinjal while still
hot, then mash to a pulp with the help of a fork. Heat 1 tsp. Of ghee
and toss in mustrd seeds, when the seeds start popping. Add garlic, onion
and chilli and cook till soft. Stir this mixture into the curds along
with brinjal, salt and chilli powder. Mix thoroughly then sprinkle on
top ground cumin seeds.
