How to Prepare / Make / Cook -Cucumber raita ?Cucumber raita 1 medium cucumber, peeled and grated finely. 2 cups curds. 1 tsp. Ground dry ginger. 1 tsp. Roasted and ground cumin seeds. ½ tsp. Mustard seeds. Salt and chilli powder to taste. Sprinkle salt over cucumber and set aside for 15 minutes, then squeeze
out all the moisture. Blend curds with 2 tblsps. Water, salt, and chilli
powder and beat nicely. Mix in the rest of the ingredients with the exception
of mustard seeds. Heat 1 tsp. Of ghee to smoking and toss in mustard seeds,
when they splutter, pour over the raita. Serve chilled.
