How to Prepare / Make / Cook - Green gram pullao ?


Green gram pullao

2 cups Delhi rice. 3 cups shelled green grams boiled. 1 kilo tomatoes, blanched and pureed. ½ cup coconut milk (optional). ½ inch piece cinnamon stick, broken into bits. 4 cloves 8 peppercorns. 1 bay leaf, crumpled. 1 tsp. Seeds of big black cardamoms. 2 hard boiled eggs, shelled and cut into rings. Handful of coriander leaves, ½ tsp. Turmeric powder.

Heat 3 tblsps ghee and put in the whole spices. Mix nicely, then put in the rice and fry for 5 minutes. pour in coconut milk, tomatoes, salt and turmeric powder. Cover and cook over a slow fire until almost all the moisture is absorbed. Stir in the green channas. Cover tightly and continue cooking on a very low fire until no moisture is left. Remove from fire, put in a serving dish and place rings of eggs over top. Sprinkle coriander leaves on top and serve immediately.
