How to Prepare / Make / Cook - Zarda ?Zarda 2 cups Delhi rice. 4 cups milk. 1 tblsp. Cardamom seeds. ½ tsp. Essence of saffron. 4 tblsps. Sugar. Handful of fresh rose petals, cleaned. 25 grams each of almonds, pistachios, cashewnuts and raisins. Silver foil. Blanch almonds and pistachios. Lightly fry raisins. Heat 2 tblsps. Ghee
and put in cardamom seeds, then put in rice. Fry for 5 minutes, then add
milk, sugar and rose petals. Cook over a slow fire till almost all the
moisture is absorbed and the rice is tender. Stir in nuts, raisins and
essence. Cover tightly and continue cooking over a very low fire until
no moisture is left. Serve hot or cold covered with foil.
