How to Prepare / Make / Cook - Chat ?


Chat

1 lemon-sized ball of tamarind. Handful of coriander leaves. A few mint leaves. 1 small onion. 2 green chillies. 1 tblsp. Powdered jaggery. 4 dates, stoned. 1 sour apple, cored. 15 grams raisins. 1 tblsp. Cumin seeds. 1 tblsp. Mango powder. 1 tsp. Each of ground dry ginger and coriander powder. 1 tsp garam masala.

Grind all the above ingredients to a fine paste with the exception of tamarind. Soak tamarind in 1 cup water for 15 minutes, then squeeze out the pulp. Mix the tamarind in ground paste and sieve through a fine sieve. This is the chat. Now in this chat you can put a variety of things like boiled potatoes, bananas etc.

Arbi chat: Boil, peel and dice the arbi into small pieces and put into the chat. Sprinkle with roasted and ground peanuts before serving

Potato chat: Boil, peel and dice potatoes into pieces and mix into the chat. Serve sprinkled with a handful of finely sliced almonds.

Banana chat: Peel ripe bananas and cut them into thin circles. Put into the chat and sprinkle coarsely pounded walnuts on to before serving.

Pakodi chat: Fry pakodas of whole green chillies and toss into the chat. Mix nicely then serve after 5 minutes :
