How to Prepare / Make / Cook - Dahi tikki ?


Dahi tikki

8 ozs. Curds. 2 ozs. Gram flour.

For filling : ¼ coconut, shredded. 125 grams green peas. Boiled and mashed coarsely. 25 grams each of cashewnuts, walnuts, groundnuts and raisins. 10 grams each of almonds and pistachios. ½ inch piece ginger. minced. 1 tsp.garam masala. Handful of finely sliced coriander leaves. Lime juice according to taste. 2 green chillies minced. Salt and chilli powder to suit the taste.

Fry the coconut to a light red colour. Pound all the nuts coarsely and mix with coconut and all the ingredients of filling. Put curds in a clean piece of cloth and tie loosely. Hand the bag for a couple of hours in order to enable all the liquid to drip through, then knead to a smooth mixture after adding to it gram flour and salt. Divide the curd mixture and the filling into equal portions. Shape the curd mixture into cups, fill with the stuffing. Shape the curd mixture into cups, fill with the stuffing, bind the edges together and shape into smooth rounds. Shallow fry to a golden brown colour. Drain and serve immediately.
