How to Prepare / Make / Cook - Dahi wada ?Dahi wada 1 cup black gram or urad dal. 1 inch piece minced ginger. A handful of finely sliced coriander leaves. 2 green chillies, minced. 1 tblsp. Raisins 6 sliced almonds and 12 skuced oustacguis, 1 tsp baking powder. 2 cups nicely churned curds. 1 tsp. Garam masala. 1 tsp. Roasted and ground cumin seeds. ¼ tsp. Pepper powder. Jeera chutney (see chapter on pickles and chutneys). Salt and chilli powder to taste. Soak dal overnight in water. Next morning, drain and grind to a fine
paste over the grinding stone. Mix in baking powder, chillies, ginger,
coriander leaves, salt and chilli powder and knead to a smooth mixture.
Shape the mixture into small round wadas or balls around a couple of nuts
and a raisin. Deep fry the wadas a few at a time to a golden brown colour.
Drain and then soak them for 15 minutes in water. Squeeze out the water
and place them in a deep glass dish. Cover with jeera chutney. Then pour
beaten curds over the top. Sprinkle garam masala, pepper, ground cumin
seeds and chilli powder over the top before serving. If you wish you can
