How to Prepare / Make / Cook - Rus-dar pakodi ?Rus-dar pakodi 3 cups moong dal. 2 small onions, minced. 1 inch piece giner. 6 flakes garlic. 4 green chillies, minced. 1 small bunch finely sliced coriander leaves. A few sliced mint leaves. 1 tsp. Garam masala.1 tsp. Ground cumin seeds. 2 tblsps. Mango powder. ½ tsp. Pepper powder. Salt and chilli powder to taste. Jeera chutney. (see chapter on pickles and chutneys). Grind ginger and garlic to a paste. Soak dal overnight in water. Next
morning, drain thoroughly and grind into a smooth paste. Set aside for
1 hour, then mix in chillies, ground paste, salt, chilli powder, ground
cumin seeds, coriander and mint. Mix thoroughly. Heat enough ghee for
deep frying and drop the mixture with the help of a teaspoon in the hot
ghee. Fry the pakodies, but not too crisp. Drain thoroughly and place
in glass plate. Cover with jeera chutney and sprinkle with garam masala.
