How to Prepare / Make / Cook - Besan kofta curry ?


Besan kofta curry

1 large onion. 4 flakes garlic. 2 big tomatoes, blanched and diced. 1 tsp. Garam masala. Handful coriander leaves. ½ tsp. Turmeric powder. Salt and chilli powder to taste.

For koftas: 250 grams besan. ½ tsp. Cumin seeds. 1 ½ tblsps. Melted ghee. 1 tsp. Crushed pomegranate seeds. 2 large onions. Alubhukharas or dry plums.

Mix together besan, salt, chilli powder, ghee, pomegranate and cumin seeds. Grind onions to a very fine paste and put into the besan and knead to a stiff dough without adding any water. Divide the dough into small lemon-sized balls. Form the balls into round koftas around a whole alubhukhara and deep fry to a golden colour. Drain and set aside. Grind onion and garlic to a paste. Heat 2 tblsps. Ghee and fry the ground paste to a golden brown colour. Add all the spices and fry briefly, then put in the tomatoes and cook till ghee separates. Pour in 1 cup water. Cook till dry. Mash to a paste with a wooden spoon, put in 2 more cups of water. Bring slowly to a rolling boil, simmer gently for 5 minutes, toss in the koftas and simmer for 5 more minutes. Serve hot garnished with chopped coriander leaves.
