How to Prepare / Make / Cook - Burta ?


Burta

2 large black brinjals. 1 big onion, minced. 2 medium tomatoes, blanched and sliced. 4 green chillies, minced. Handful of sliced coriander leaves. 1 tsp. Ground cumin seeds. Dash of pepper powder. Salt and chilli powder to taste.

Hold the brinjals with the help of tongs over a gas flame and cook over a low fire till the skin turns completely black and wrinkled. Peel the brinjals and mash to a pulp. Heat 2 tblsps. Ghee and put in onion and chillies and cook till soft, put in tomatoes and spices and cook again till tomatoes turn soft. Mix in the brinjals. Cook till the mixture turns quite dry. Serve hot garnished with chopped coriander.
