Cauliflower in fenugreek leaves

1 medium cauliflower, broken into flowerets. 1 big bunch fenugreek leaves. 1 bunch green garlic. 1 small onion, minced. ½ -inch piece ginger, minced. 3 green chillies, minced. 1 tsp. Ground cumin seeds. 1 tsp. Coriander powder. ½ tsp. Turmeric powder. 1 big tomato, diced. Handful of sliced coriander leaves. Salt and ohilli powder to taste.

Clean and slice fenugreek leaves and garlic. Heat 2 tblsps. Ghee and fry onion and ginger till soft. Put in methi, garlic and ginger and fry till dry. Put in tomatoes and ali the above ingredients with the exception of gobi. Cook till tomatoes turn soft. Mash to a paste with the help of a wooden spoon, then put in the gobi. Mix nicely. Sprinkle two tablespoons of water over the top. Cover tightly and cook over a low fire till the gobi is done.
