How to Prepare / Make / Cook - Khati palak ?Khati palak 2 bunches spinach, cleaned and sliced. 2 small onions, minced. 1 inch piece ginger, minced. 4 flakes garlic, minced. 2 green chillies, minced. 125 grams sour cruds. ½ tsp. Turmeric powder. 1 tsp. Roasted and ground cumin seeds. Salt and chilli powder to taste. Beat curds nicely with 3 cups and set aside. Heat 2 tblsps. Ghee and fry onion, ginger and garlic until soft. Put in spinach along with all the spices. Cover tightly and cook over a low fire till the spinach is tender and dry. Remove from fire and mash to a very fine paste with a wooden spoon. Stir in beaten curds and bring slowly to a boil. Remove from fire and serve in individual bowls. This palak is eaten with a spoon because it is quite watery.
