How to Prepare / Make / Cook - Kutter ?

Shells of 1 kilo of fresh peas. 1 tsp. Cumin seeds. A few sliced curry leaves. 1 medium tomato, diced. 1 tblsp. Mango powder. ½ tsp. Each of garam masala and turmeric powder. ½ inch piece ginger, minced. 2 green chillies, minced. 2 medium potatoes, peeled and cubed. Salt and chilli powder to taste.

Open pods of peas lengthwise. Divide the pods lengthwise so that you will have two leaves. Holding each leaf, stalk upwards, with the inside towards you, bend the stalk end inwards about one-fourth inch down until it cracks without completely breaking it. Then, gently pull down the inner lining. Remove any stringy parts and wash the soft outer leaves. Heat 1 tblsp. Ghee and toss in cumin seeds. When they pop, put in potatoes and peapods and fry for 5 minutes. Mix in the rest of the ingredients and dry. Do not add any water. Serve hot.
