How to Prepare / Make / Cook - Masala gobi ?


Masala gobi

1 medium cauliflower, broken into flowerets. 4 tblsps. Beaten curds. Handful of sliced coriander leaves. ½ tsp. Each of garam masala, ground cumin seeds and turmeric powder. 4 green chillies, minced. 4 flakes garlic. 3 medium tomatoes, diced. 2 medium onions. Salt and chilli powder to taste.

Grind onion, ginger and garlic to a paste. Heat 5 tblsps. Ghee and fry the gobi to a light brown colour. Drain out the cauliflower and in the remaining ghee fry the ground paste to a golden brown colour. Put in spices and fry briefly. Then add the tomatoes. Cook till the ghee separates. Put in 1 cup water and cook till dry. Put in cauliflower and chillies. Mix nicely, then pour in half cup water. Cook over a low fire till the gobi is tender and almost dry. Put the vegetable in a serving dish and cover the surface with curds. Garnish with coriander leaves and serve.
