How to Prepare / Make / Cook - Mutter alu ?


Mutter alu

250 grams potatoes, peeled and cubed. 250 grams shelled peas. 1 big tomato, diced. ½ cup curds, ½ tsp. Turmeric powder. ½ tsp. Each of ground cumin seeds and garam masala. 25 grams fried cashewnuts, chopped. ½ inch piece ginger. 3 green chillies. Minced. Handful of sliced coriander leaves. Salt and chilli powder to taste.

Grind onion and ginger to a paste. Heat 2 tblsps. Ghee and fry the ground paste to a golden colour. Put in spices and fry briefly. Put in tomatoes and curds and cook till the ghee separates. Put in peas, potatoes and chillies. Fry for 5 minutes. pour in 1 cup water. Mix nicely and cook over a gently fire till the vegetables are almost done. Stir in cashewnuts and continue cooking until the vegetables are done. Serve hot decorated with coriander leaves.
