How to Prepare / Make / Cook - Masala brinjals. ?


Masala brinjals.

250 grams small brinjals. 1 tsp. Each of ground cumin seeds and crushed pomegranate seeds. ½ tsp. Each of turmeric powder and garam masala. 2 big tomatoes, blanched and sliced. 1 big onion, minced. 1 inch piece ginger. minced. Salt and chilli powder to taste. 4 green chillies, minced. Handful of sliced coriander leaves.

Mix together cumin and pomegranate seeds. Garam masala, turmeric, salt and chilli powder. Wash and cut brinjals into four halfway through, then stuff the mixed ground spices into the brinjals and set aside. Heat 2 tblsps. Ghee and fry ginger and onion till soft. Put in tomatoes, chillies, coriander and salt and cook till the ghee separates. Place the brinjals over the top. Sprinkle a little hot water over top. Cover tightly and cook over a low fire, stirring occasionally till done. Serve hot.
