How to Prepare / Make / Cook - Sabit gobi ?


Sabit gobi

1 medium cauliflower. 250 grams kheema. 25 grams cashewnuts. 2 large onions. 1 inch piece ginger. 8 flakes garlic. 5 medium tomatoes, blanched and pureed. 1 tsp. Each of garam masala, ground cumin seeds and turmeric powder. Handful of sliced coriander leaves. Salt and chilli powder to taste.

Grind onion, ginger and garlic to a fine paste. Heat 4 tblsps. Ghee and fry half of the ground paste until it starts changing colour. Put in garam masala, cumin seeds and half of turmeric. Fry briefly, the put in kheema and fry till dry and crumbly. Put in 2 cups of water and cook till tender and completely dry. Remove from fire, cool and grind to a fine paste along with cashewnuts. Wash the cauliflower nicely and cut the stalk very close. Hold the gobi against light to check for any blemish. Wipe dry and stuff the kheema mixture carefully in between the flowerets. Heat 6 tblsps. Ghee and fry the remaining onion paste to a golden colour. Put in turmeric, salt, tomatoes and chilli powder. Cook for 5 minutes, then put in the cauliflower with head downwards. Cook covered on a low fire till done. Serve it, garnished with chopped coriander leaves.
