How to Prepare / Make / Cook - Stuffed brinjals ?


Stuffed brinjals

250 grams small brinjals. 1 tblsp. Poppy seeds and coriander powder. ½ tblsp. Mango powder. 1 medium onion. ½ tsp. Turmeric powder. Handful of methi leaves. 1-inch piece ginger. 4 flakes garlic. 4 green chillies. Handful of coriander leaves. Salt and chilli powder to taste.

Cut the brinjals into four halfway through. Grind to a fine paste the rest of the ingredients and stuff into the brinjals. Heat 2 tblsps. Ghee and place the brinjals in it. Cover tightly and cook over a low fire till the brinjals are done, stirring occasionally. Serve hot.
